Too Many Eggs

We came across this book last year and have enjoyed its recipes & history. It has over 800 egg based recipes and delves into the history or origin of the recipe.You can purchase the book or download the free PDF.  We have a deep appreciation for recipe books so when I learned this was a beautiful hardback book, I knew I had to buy it. It's like an encyclopedia and looks stunning on the shelf. 

Too many eggs, is shall we say a “ problem” for a small producer that allows the hens  to lay at their natural rate.  We don't offer our flock supplemental lighting to extend their laying season! As the days get shorter during the year the layers will naturally slow down their production. We hover above too many and not enough eggs.  Check out @toomangeggs.com for inspiration.
