Chuck Roast...fast food.

We often find ourselves wondering what's for dinner.  The chuck roast has come to the rescue.  

Our recipe is simple.  It's broken into two parts

First Part:

Kitchen gadgets needed:

  1. insta pot (you could easily use the crock pot to slow cook all day)

Ingredients:

  1. Chuck
  2. bay leave
  3. oregano
  4. cumin
  5. salt & pepper
  6. optional a can of chipotle peppers in adobo sauce
  7. add 1/4 cup of water

Put all the ingredients above in the insta pot and cook for 40 minutes and allow it to slow release (if time allows.) Separate the liquid and save it for another recipe if it yielded more than a cup.  Throw away the bay leave. I'm sorry but I don't measure my ingredients. Some of this and a little of that is my kind of cooking.  

Second Part:

On a blackstone/griddle/large pan saute diced onions in lard until translucent then add the cooked roast meat.  Shred it with wooden spoons.  Crisp it to your liking.  

We suggest Yoli flour tortillas for soft tacos or corn tortillas for a more authentic taste.  We also topped our tortilla chips with the meat and it was a hit.
