**Prices are based on hanging weight which is roughly 72% of live weight. Hanging weight, also known as 'on the rail,' is the weight of animal after it has been slaughtered (blood/viscera have been removed..additional shrinkage and processing will reduce the final packaged weight)
**Processing fees are paid directly to the butcher and are specific to that specific animal & 'cut sheet.' Standard processing for a WHOLE includes a flat fee (approx $90) + $.95/lb x hanging weight. Processing will range based on how much 'value add' products that you choose. (bacon/hams etc)
HOW MUCH PACKAGED MEAT DO I GET?
Packaged pork yield varies on an individual's desire to eliminate waste. Be adventurous -> take home MOST of the hanging weight. Are you a bit cautious in expanding culinary experiences? -> take home 65% of hanging weight. (pork skin, organs, lard, bones should be highlight of this experience and we recommend you keep it ALL!)
++On average, a 300 lbs hanging weight animal will yield between 180-250 lbs of products. (again, we hope you choose the NO WASTE experience)
